			<content:encoded><![CDATA[<p>Lulu and I had so much fun in the kitchen yesterday as we prepared and cooked up a storm to celebrate Bastille Day. We had one new cool ingredient to work with and of course the ideas just kept flowing like crazy. We decided to concoct something fresh utilizing the asparagus we got from the farmer&#8217;s market that morning and the organic home grown eggs from my friend&#8217;s backyard which I received the other day. The <strong><a href="http://www.letsmakeknorr.com/Home.aspx" target="_blank">Knorr®</a> Concentrated Stock</strong>  which we received from <a href="http://http://www.letsmakeknorr.com/Home.aspx" target="_blank">Knorr</a> and <a href="http://www.blogher.com/knorr-four-recipe-contest" target="_blank">BlogHer</a> definitely made it a more leisurely cooking for me - and because I did not have to deal with too much liquid from a regular broth this time, the asparagus sauce turned out to have an even better and visually appealing texture &#8211; we took lots of photos too! Here&#8217;s our dish. <p>Serves 6-8 people<br />
Cooking and prep time 45 minutes</p>
<h4>Ingredients</h4>
<p>3 pounds of Boneless Chicken Breasts<br />
1 tsp Salt<br />
1 tsp freshly ground black pepper<br />
1 cup of flour<br />
4 eggs<br />
1 package of Panko bread crumbs<br />
Olive Oil</p>
<p><strong>Sauce:</strong><br />
2 bundles of fresh asparagus<br />
1 bar of unsalted butter<br />
1 tsp dried Thyme leaves<br />
1 tsp Italian Seasoning<br />
1 tsp of Knorr® Concentrated Stock<br />
1 pint of heavy cream</p>
<p><strong>Garnish:</strong><br />
1 bundle of Asparagus</p>
<h4>Procedure</h4>
<ol style="text-align: left;">
<li>Season the chicken breasts with salt and pepper, cover with clear wrap and set aside.</li>
<li>Like an assembly line, prepare 3 separate deep dishes for the chicken breast coating. One dish should have the strained flour, the other the egg wash and the last would be the panko bread crumb dip.</li>
<li>On medium heat pour about 1 ½ tablespoons of Olive Oil on a non-stick pan. Sear the breaded chicken on both sides quickly until light brown and put them on a non-stick baking pan.</li>
<li>Set your oven to 350°, put the seared chicken breasts in and bake for about 20 minutes.</li>
<li>Wash the asparagus then trim and clean the ends.  Set aside a bundle for garnish.</li>
<li>Chop the 2 remaining bundles of asparagus into 2 inch stalks.</li>
<li>Melt the butter in another non-stick casserole and pour the chopped asparagus in.</li>
<li>Boil 10 cups of water and blanch the remaining asparagus stalks. Drain after 2 minutes and set aside.</li>
<li>Pour the Thyme, Italian season and the Knorr® Concentrated Stock into the sauce mixture and stir constantly.</li>
<li>Add the heavy cream and change the cooking temperature to low heat. When the asparagus is soft, remove from the stove and puree the sauce with a hand blender.</li>
<li>Drizzle the sauce over the baked chicken and garnish with the blanched asparagus. Serve warm.</li>

			<content:encoded><![CDATA[<p>::cough, cough::  Someone&#8217;s under the weather!  Actually, make that two someones as both Kaye and I have lost our voices, or are hoarse ~ me nursing a cough today which I thought I would be able to fight off.  The rainy and suddenly cold again weather is not helping and yesterday, I got drenched walking my pup.</p>
<p>Nyquil helps me sleep good at night but I don&#8217;t want to be medicated during the daytime, so instead, I went to get some sickie-soup fixings at the  grocery to make my quick and easy Chicken Soup.  (Note: I don&#8217;t like canned soups).</p>
<p>It took me 15 minutes to make this downright cozy comfy soup which warmed my core.  And you can too!  It&#8217;s really easy!  (Almost everything I do these days are easy, short cuts).</p>

<p style="text-align: center;">I have to give props here to whoever invented roasted chicken-to-go.  They made life a whole hour easier!  To make the soup above, you&#8217;ll need:</p>
<p style="text-align: center;">1 whole roasted chicken</p>
<p style="text-align: center;">2 48oz Chicken Broth (I buy the one in a TetraPak, I have a thing about canned foods)</p>
<p style="text-align: center;">a lotta garlic</p>
<p style="text-align: center;">frozen vegetables (I used mixed vegetables: corn, peas, green beans, edamame)</p>

<p style="text-align: center;">I started out with a whole roasted chicken which I cup up into little pieces.  I used almost the whole chicken save for one breast which my pup will have for dinner and lunch tomorrow.  He&#8217;s not sick, though. He&#8217;s just spoiled.  Cutting up the chicken is the only work you&#8217;ll have to do to make this soup.</p>

<p style="text-align: center;">In a pot, heat a couple tablespoons of olive oil then brown some crushed garlic till it&#8217;s almost toasted.  Throw in the chicken and cook till it&#8217;s browned.</p>

<p style="text-align: center;">Add as much frozen vegetables as you want (I used half a big pack); mix with the chicken then add one 48oz container of broth.  Add a cup of rice (or thin pasta).</p>
<p style="text-align: center;">Cook for 12 minutes. Maybe 13, but that&#8217;s an unlucky number.</p>

<p><span style="font-family: Arial,Helvetica,sans-serif;">One morning in January, I woke up feeling like I caught the bug. I decided that I would do an organic fasting to fight it, which meant that I was going to have  only </span><span class="Apple-style-span" style="font-family: Arial,Helvetica,sans-serif;"><a href="http://www.mayoclinic.com/health/organic-food/NU00255">organic food</a></span><span class="Apple-style-span" style="font-family: Arial,Helvetica,sans-serif;"><strong> </strong></span><span class="Apple-style-span" style="font-family: Arial,Helvetica,sans-serif;">all day, mostly </span><span class="Apple-style-span" style="font-family: Arial,Helvetica,sans-serif;">raw</span><span class="Apple-style-span" style="font-family: Arial,Helvetica,sans-serif;">. Although I had somewhat started to eat this way for some months now, I had not done anything as intense as what I was planning.</span></p>

I  don&#8217;t suffer from a chronic, serious disease so I am eating some foods that are eliminated in the Gerson diet for the treatment of cancer and other chronic diseases, like wheat, nuts, and dairy products. </span></div>

To me, it is also a way of bombarding my body with much needed nutrients, hyperalimentation.</span></div>

<p><span class="Apple-style-span" style="font-family: Arial,Helvetica,sans-serif;"><strong>JUICING</strong>: First, <strong>wash</strong> the fruit and vegetable ingredients  in filtered water with a capful or so of <a href="http://www.apple-cider-vinegar-benefits.com/">apple-cider vinegar</a> (ACV), which acts as a disinfectant. I use purified water because it is partly absorbed by the organic fruits and vegetables which are soaked for, at least, 10 minutes. This keeps their organic origins from being contaminated by any toxins or other matters that maybe in the tap water. Then, drain off the excess water.</span><br />

A lot of it! I consumed close to 4.5 kilos (about 10 pounds) of fruits and vegetables. In the Gerson diet for people suffering from chronic diseases, the total consumption is close to 9 kilos (about 20 pounds) per day.</span><br />

			<content:encoded><![CDATA[<p><em><strong>Editor&#8217;s Note</strong>:  After eating some fabulous meals these past few months, I have to listen to my good friend and contributor to our site, Yolanda Zaragoza.  She reminds me when I&#8217;m having too many sweet or hearty meals and is a proponent for healthy eating.   It makes a lot of sense to sometimes stop in our tracks and re-evaluate what we are putting into our bodies; a good balance is always an excellent idea.  As such, here is a two-part reminder of how simple it is to give our cells a chance.</em></p>
<p><strong>Out and About and Healthy:  Yolanda Zaragoza</strong></p>
<p>I am on a preventive course as I try to be healthy. Because both my parents lived into their nineties, I would like to be as healthy as possible if I ever get to that age.</p>
<p>I am alarmed at how many of my family and friends have been afflicted by heart disease, diabetes, nerve -related diseases, mental diseases, and cancer. I am saddened that some of them have passed at a relatively young age.</p>
<p>I first heard about the <span style="font-weight: bold;">Gerson Therapy</span> from a homeopathic doctor, who recommended it for healthy eating, to help or prevent developing diseases. My DNA predisposes me to contracting some serious illnesses. I got very interested in it and did some research. From this<a href="http://www.alternative-cancer-care.com/Gerson_Therapy.html"> link</a>,  , I gathered so much more information as I started to click on the other links on the right-hand column. This is not just an alternative-cancer treatment, it helps heal the body.</p>
<p>There is also a link in <a href="http://www.youtube.com/watch?v=X23o3RzJuPo">YouTube</a> that is very informative: . This was the first solid information that I got, via a seminar given by Charlotte Gerson, that led me to juicing.</p>

<p>My son had introduced me to the <span style="font-weight: bold;">raw-food diet</span> several years back. Thanks to the websites in the internet, it is easy to find<a href="http://hubpages.com/hub/List_of_Vegetables_Fruits_and_Its_Nutritional_Values_Site"> information</a> on the curative and nutritional values of fruits, grains and vegetables.</p>
<p>I finally put my heart and mind into this after I was diagnosed with osteo-arthritis early this year, for which the doctor said there was no cure as it is a consequence of aging. I am a vegetarian during most days of the week, supplementing it by eating fish once or every two weeks, and adding eggs and yogurt to my diet from time to time, and having occasional cheese treats. But mind you, I end up cheating once in a while with chocolates, pastries, and chips. To keep me from doing this, I avoid buying packaged, processed food stuff.</p>

<p>I am looking to also eliminate dairy products from my diet as I am lactose intolerant. <a href="http://www.canceractive.com/cancer-active-page-link.aspx?n=679"><span style="font-weight: bold;">Jane Plant</span></a> makes for a convincing case as to why we do not need dairy products in our diets.</p>
<p>Typically, I start my day with <span style="font-weight: bold;">a glass of organic apple-cider vinegar (ACV)/honey</span> drink and also before each meal. ACV helps our body to become more alkaline, which helps the body to heal. <a href=" http://www.bragg.com/books/acv_excerpt.html"> Here&#8217;s</a> some helpful information.</p>

<p>After, that is followed by <span style="font-weight: bold;">juicing fruits and veggies</span>&#8230;my basic combination is green apple, broccoli and carrots. Apples and grapes are my sweetening agents. I also have other combinations by using or adding celery and parsley, bell peppers, sweet potato, squash, zucchini, cucumber, tomatoes, kiwi, pineapple, and more. Anything I find in my veggie box in my refrigeration is always a probable ingredient for juicing. They all have nutritional benefits.</p>

<p>In-between meals, I have servings of fruits and nuts that have been previously <a href="http://www.raw-food-living.com/soaking-nuts.html">soaked</a> , or take another glass of freshly-made juice.<br />
On a daily basis, I consume between 4 to 6 lbs. of raw fruits and vegetables, using organic when available, which means juicing 2 to 4 glasses a day. I increase my juice intake whenever I can. Each glass of juice is prepared for immediate consumption, with the use of a <span style="font-weight: bold;">&#8220;masticating&#8221; juicer</span>.</p>
<p>From the variety that I include in my daily diet, I am getting my daily requirements of vitamins and nutrients from these plant sources, therefore, there is no need to take the many vitamin supplements I used to. I am aware of possible deficiencies from being a vegetarian, so I pay special attention to specific vegetarian sources for protein, calcium, Vitamin D, Vitamin B complex and iron sources. For now, I still take calcium, Vitamin B-12 and multi-vitamins (to finish my supply, and fish oil).</p>
<p>You might be wondering what this dietary changes have done for me. For the most part, my pain level has gone down. The pain in my neck area, my chronic tennis elbow, and joint pain on my left knee have disappeared. This positive consequences have encouraged me to continue on this food path.</p>
<p>This lifestyle change in how I eat finds me spending more time in the kitchen to prepare my food. What I save from buying vitamins and supplements are used to buy organic supplies which are triple the price. My rationale behind this is I will be saving on medical costs when I grow older.</p>
<p>In Dr. Amen&#8217;s <a href="http://www.youtube.com/watch?v=mudf4-ngvUk">book</a> &#8220;<span style="font-weight: bold;">Change your Brain, Change your Life</span>&#8220;  the brain can be healed from the consequences resulting from the abusive use of drugs, alcohol, tobacco; exposure to environmental toxins, and chemical exposure to one&#8217;s trade. It is possible with a turn to a healthy lifestyle &#8211; a high-quality diet and regular exercise.</p>
<p>I noticed that when I am not in control of what I eat, my pain and body aches return. This happens when I go on a trip or eat out often.</p>
<p>May I invite you to take a look at how you can become healthy. My diet is just as important as my exercise routine. It would be super to grow old with all of you, and still be able to meet up and have a great time, spend time on Facebook, and maintain a good quality of life.</p>
